Huai’an people have many different ways to eat hairy crab: to steam, to pickle, wine-soaked, to make noodles, to make porridge, to make rice noodles, to make crab balls. Thus, chefs in Huai’an can use hairy crabs to make Hongze Lake “All Hairy Crab” Feast. What’s more, there are lots of famous traditional cuisines, such as fry crab noodles, steam crab balls, and crab and fish porridge. Based on those dishes, Hongze Lake International restaurant innovated Hongze Lake “All Hairy Crab” Feast.
